The original version of this skillet relied on sirloin, a heavy pour of oil, and a mayo-based sauce. We trim the fat by swapping to 96/4 lean ground beef—it cooks faster, absorbs the sauce better, and is a macro cheat code for protein. The sauce drops the mayo entirely in favor of non-fat plain Greek yogurt and fat-free cream cheese, mimicking the rich texture while slashing 19 grams of fat per serving. Finally, cutting the brown rice 50/50 with cauliflower rice keeps the bowl physically massive while keeping the carbs in check.

Beef & Broccoli

  • 1 lb 96/4 lean ground beef
  • 1 tbsp cornstarch
  • ¼ tsp salt
  • 1.5 tbsp avocado oil (divided: 1 tbsp for beef, ½ tbsp for broccoli)
  • 6 cups broccoli florets
  • 3 cloves garlic, sliced
  • ½ cup water, divided

Bang Bang Sauce

  • 3 oz fat-free cream cheese
  • ¼ cup non-fat plain Greek yogurt
  • 3 tbsp sweet chile sauce
  • 1½ tbsp Sriracha
  • 1 tbsp rice vinegar
  • 1 tsp lower-sodium soy sauce

The Bowl Base & Garnish

  • 1 cup hot cooked brown rice + 1 cup hot cooked cauliflower rice (mixed together)
  • 1 medium scallion, sliced
  • ½ tsp sesame seeds

Instructions

    Toss the 96/4 ground beef in a bowl with the cornstarch and salt. Heat 1 tbsp avocado oil in a large flat-bottom wok or cast-iron skillet over medium-high heat. Add the beef in an even layer; cook, breaking up and stirring, until browned, 4–5 minutes. Transfer to a clean plate. Do not wipe the wok.

    Heat the remaining ½ tbsp avocado oil over medium-high heat. Add the broccoli florets, sliced garlic, and ¼ cup of the water. Cook, stirring occasionally, until tender-crisp, 6–8 minutes, adding the remaining ¼ cup water halfway through. Transfer to the plate with the beef. Do not wipe the wok.

    Reduce the heat to medium-low. Add the fat-free cream cheese, Greek yogurt, sweet chile sauce, Sriracha, rice vinegar, and soy sauce. Whisk constantly until smooth and gently simmering, about 2 minutes.

    Return the beef and broccoli to the wok; fold until evenly coated in the sauce. Remove from heat.

    Build: Divide the brown and cauliflower rice blend among 4 bowls. Top with the beef and broccoli mixture, then sprinkle with the sliced scallion and sesame seeds.

96/4 ground beef is leaner than sirloin without losing that beefy flavor, and the light dusting of cornstarch helps it develop a crust while thickening the sauce later. The real magic is the Bang Bang sauce: non-fat Greek yogurt brings a tang that actually enhances the sweet chile and Sriracha, while the fat-free cream cheese melts down to create a glossy, mayo-like coating.
