The Numbers Up Front

Total Cooked Yield: ~17 oz / 490 g finished and sauced (from 1 lb raw chicken)

That's: nearly three 6 oz portions • Meal prepping? Double the batch.

Default Portion: 6 oz / 170 g cooked, sauced

⚠️ Corrected Sept 14 2026. The yield used to read 12 oz — that's the *chicken

alone**, before the potato-starch coating and the whole bang bang sauce. Both

weigh something, and the matrix below says it counts them, so the real batch is

about 17 oz. Same batch calories, spread over the weight that's actually on the

plate; every row came down roughly 28%.*

✂️ Trim Trim Trim

Chicken breast is already lean — the fryer-vs-air-fryer swap is doing the real work here. If you sub in thighs for extra juiciness, expect a modest bump in fat per portion; nothing to freak out about.

Ingredients

Use-what-you’ve-got friendly.

Sorted by dish, with the spices you probably already own kept separate.

Chicken

  • 1 lb chicken breast, cubed
  • ⅓ cup milk³ + 1 large egg (marinade)
  • ¼ cup potato starch² + 2 tbsp all-purpose flour
  • ½ tsp salt • ¼ tsp black pepper • ¼ tsp shichimi togarashi¹

Bang Bang Sauce

  • 2 tbsp light mayo
  • 1 tbsp honey
  • 1 tbsp sweet chili sauce
  • 1 tsp gochujang or sriracha

Substitutions

  • ¹ shichimi → chili powder OR paprika + pinch cayenne • ² potato starch → cornstarch • ³ any milk you've got — Fairlife, nonfat, 1%, 2%

Instructions

  1. 1

Marinate — whisk milk + egg, add chicken, 15 min, drain.

  2. 2

Coat — mix starch, flour, salt, pepper, shichimi. Toss to coat.

  3. 3

Air Fry — 400°F, single layer, light spray. 8 min → shake → 4–5 min. Crisp boost: +2 min at 425°F.

  4. 4

Sauce + Toss — whisk sauce, toss chicken lightly.

🧠 Why This Works

Potato starch fries up glassier and crispier than flour alone. The marinade drain-off keeps coating thin so sauce clings without sogging. Air fryer heat blasts the starch shell — deep-fried crunch, none of the oil.

🌶️ Flavor Boosters

Extra gochujang • toasted sesame • green onion • lime squeeze • extra shichimi

🔄 Use What You’ve Got

  • No honey? 1 tbsp extra sweet chili (−30 cal per 6 oz)
  • Want it lighter? Low-Cal Drizzle: 1 tbsp sweet chili + 1–2 tbsp water + 1 tsp rice vinegar + ½ tsp sriracha (−55 cal per 6 oz vs. full sauce)
  • No air fryer? Bake 425°F, 15–18 min on wire rack

📦 Meal Prep Notes

Portion with 3 oz cooked rice per container • Keeps 4 days refrigerated • Reheat: air fryer 400°F 3–4 min or microwave 60–90 sec
