The chipotle bowl is already close — the levers are the crema and the rice pile. Swap the light sour cream for nonfat Greek yogurt (with just a little avocado for body), portion the guac, and hold the rice to 2 oz. The adobo marinade is basically free flavor.

Chipotle Chicken

The Bowl
- ◆2 oz / 57 g cooked cilantro-lime rice (cauliflower rice to drop carbs)
- ◆⅓ cup black beans, rinsed • ¼ cup roasted corn • 2 tbsp pico de gallo • lime wedge
Avocado Crema
- ◆2 tbsp nonfat Greek yogurt • ⅛ avocado • 1 tsp chili powder • ½ tsp onion powder • lime • water to thin
Instructions

Blend the chipotle, garlic, cumin, oregano, pepper, and lime into a marinade. Coat the chicken and refrigerate at least 1 hour (3+ is better).

Cook the cilantro-lime rice.

Air-fry the chicken at 400°F (200°C) 15 min, shaking halfway, until cooked through. Rest, then dice.

Whisk the avocado crema until smooth.

Build: rice → black beans, roasted corn, chicken → pico → a drizzle of avocado crema and a lime wedge.
🧠 Why This Works
The chipotle bowl is a good template that runs high on the crema and the two-scoop rice. Nonfat Greek yogurt with a touch of avocado makes a crema every bit as cool and tangy for a fraction of the fat, and holding the rice to 2 oz leaves the plate room for beans, corn, and a real portion of smoky chicken.
