  • 5 oz / 140 g chicken breast, sliced thin
  • 1 tsp garlic powder • ½ tsp Italian seasoning • ¼ tsp black pepper • salt to taste

  • 3 cloves garlic, minced
  • ½ cup cherry tomatoes, halved (optional)

Sauce

  • ¼ cup nonfat milk
  • 2 tbsp low-sodium chicken broth
  • 3 tbsp grated parmesan (2 in the sauce, 1 to finish)
  • 1 tsp garlic powder • ¼ tsp Italian seasoning • salt & pepper

To Finish

  • Extra parmesan • fresh parsley • a pinch of red pepper flakes

Instructions

    Cook the pasta. Cook Carbe Diem to package directions. Drain and reserve 2 tbsp of the pasta water.

    Cook the chicken. Season with garlic powder, Italian seasoning, salt, and pepper. Cook in a sprayed skillet over medium-high 6–8 minutes until golden. Remove and slice.

    Sauté the garlic. Lower the heat to medium. Cook the minced garlic 30–45 seconds, just until fragrant.

    Build the sauce. ⚠️ Blend the cottage cheese and nonfat milk completely smooth BEFORE it goes near the pan — unblended, it stays grainy and will never cream. Add it to the skillet with the broth, 2 tbsp parmesan, garlic powder, and Italian seasoning. Whisk gently on low until smooth. Do not boil — it will split. Loosen with pasta water a splash at a time if it tightens.

    Combine and plate. Add the pasta and toss to coat. Simmer 2–3 minutes to thicken. Nestle the sliced chicken on top. Finish with the last tablespoon of parmesan, parsley, and red pepper flakes.

🧠 Why This Works

Garlic parm pasta is pure cream, butter, and carbs by design. Blended nonfat cottage cheese delivers that velvet richness without the fat — it emulsifies like a béchamel but brings 7g of protein per ¼ cup instead of zero. Real parmesan carries the savory depth, so you need far less of it than you'd think. Carbe Diem removes half the pasta's calories and most of its net carbs. The result eats like an Olive Garden splurge and performs like a meal-prep macro hero.
