Street corn's calories are the mayo and the cheese — so the elote dressing here is nonfat Greek yogurt with lime and chili, and just a light sprinkle of cotija for the salty hit. The Bowl

Instructions

Char the corn in a dry or lightly sprayed skillet over medium-high, 5–6 min. Off heat, stir in Greek yogurt, cotija, lime, chili powder, salt, and cilantro. Set aside.

Spray the skillet, soften onion 2–3 min, add garlic 30 sec, then the beef. Brown and drain. Stir in taco seasoning, tomato paste, and a splash of water; simmer 2–3 min.

🧠 Why This Works
Elote is fantastic and, made the usual way, mostly mayonnaise. Nonfat Greek yogurt gives the same cool, tangy cling for a fraction of the fat, and a light dusting of cotija still lands the salty, funky note that makes street corn taste like street corn.
