Two things carry this sauce. First, blending the cottage cheese before any heat touches it β the curd structure is what makes cottage cheese grainy, and breaking it in a blender gives you cream's texture while keeping cottage cheese's protein. Second, the tomatoes go in warm, not hot, and they go in dry. Dry-packed tomatoes are dehydrated flavor; dropped into a steaming sauce they rehydrate by pulling liquid out of the sauce, which concentrates the sauce and infuses it at the same time. That's why three minutes of contact tastes like it simmered for an hour.
