  • β—†1 can (8 oz) water chestnuts, drained and chopped

  • β—†Β½ cup shredded green cabbage
  • β—†Β½ cup shredded carrots

The Sauce

  • β—†ΒΌ cup hoisin sauce
  • β—†2 cloves fresh garlic, minced
  • β—†1 tbsp low-sodium soy sauce
  • β—†1 tbsp rice wine vinegar
  • β—†2 tsp minced pickled ginger
  • β—†2 tsp dark sesame oil
  • β—†1 dash Asian chile sauce, to taste β€” optional

Instructions

    Make the filling: brown and drain the meat, soften the onion, stir in the hoisin, garlic, soy, vinegar, ginger and chile sauce, then add the water chestnuts, green onions, sesame oil, plus the shredded cabbage and carrots, and the cooked meat. Cook 2 minutes.

    Let the filling cool 10 minutes. This is not optional. Hot filling steams the rice paper and tears it β€” this single step is the difference between rolls and a sticky mess.

    Set up a station: a shallow dish of warm water, a clean damp kitchen towel, and the bowl of cooled filling.

Rice paper behaves nothing like it does in a cold summer roll: under dry heat it blisters and crisps, and a light spray is enough to get it there.
