Breakfast Burrito
The Stromboli's weekday cousin — same filling, none of the dough math.

Grab-and-Go Lore
Everything great about the Breakfast Stromboli — fluffy eggs, turkey bacon, turkey sausage, molten cheese — rolled into a low-carb tortilla instead of a 900-calorie dough. (Lived as the "tortilla version" footnote on the Stromboli page. It's honestly the better everyday move, so it earned its own page.)

Macros: USDA FoodData Central + label data (turkey bacon, turkey sausage, low-carb tortilla) • egg white version • cooked weight • net carbs = total minus fiber.
The Numbers Up Front
Yield: 4 burritos
Default Portion: 1 burrito (~7 oz / 200 g)
Per burrito: 215 cal • 24g protein • 9g fat • 20g carbs (10g net)
✂️ Trim Trim Trim
Two levers stacked. Turkey bacon and turkey sausage over pork, and egg whites over whole eggs — the egg swap alone drops about 300 calories and 23g of fat off the filling while keeping every gram of protein. Then the low-carb tortilla carries it all at 11g of protein per 100 calories, the best density of any wrapper we tested.
Ingredients
Use-what-you’ve-got friendly.
Sorted by dish, with the spices you probably already own kept separate.
Eggs — pick one
- ◆120g egg whites (4 whites) — macros use this
- ◆120g egg substitute, or 4 whole eggs (richer, +~300 cal / +23g fat across the batch)
The Filling
- ◆¼ cup (60ml) fat-free milk
- ◆4 slices (40g) turkey bacon, cooked and chopped
- ◆4 oz (113g) turkey breakfast sausage, cooked and crumbled
- ◆½ cup (56g) low/no-fat cheddar
- ◆½ cup (56g) low/no-fat mozzarella
- ◆Optional: ½ cup (60g) sautéed onions + peppers
- ◆1 tbsp spicy light mayo • salt, pepper, everything bagel seasoning
Wrapper
- ◆4 large low-carb tortillas
Instructions
- 1
Scramble the eggs with milk, salt, and pepper until just set — slightly underdone, they finish when you crisp the burrito.
- 2
Mix in the cooked bacon, sausage, cheeses, and optional veg.
- 3
Fill each tortilla, add a swipe of spicy mayo, roll burrito-style.
- 4
Crisp — air fry seam-side down at 380°F for 6–8 min, or sear in a dry pan until golden on both sides.
🧠 Why This Works
Scrambling the eggs to just-set keeps them tender through the second cook instead of turning rubbery — the most common baked-egg mistake. Searing the seam side first glues the roll shut so it holds together, and the low-carb tortilla crisps like a fried shell without any added oil.
🌶️ Flavor Boosters
Hot sauce • pickled jalapeños in the filling • extra everything bagel seasoning on the outside • a side of the Chipotle Fiesta Sauce for dunking
🔄 Use What You’ve Got
- —Whole eggs instead of whites? Richer, +~300 cal / +23g fat across the batch — your call
- —No turkey sausage? Extra turkey bacon, or any lean breakfast sausage
- —No low-carb tortillas? A regular tortilla works, macros climb with the carbs
📦 Meal Prep Notes
Freezes beautifully — wrap each burrito individually, reheat from frozen in the air fryer at 375°F for 8–10 min • Refrigerated, they keep 3 days • The whole point of this page is a grab-it-from-the-freezer weekday breakfast
