No fat cap to trim — the trim happens at the meat counter. 93% lean beats 80/20 by about 115 calories and 15g of fat per 113g of beef, and because the beef is spread thin and baked right onto the tortilla, none of that fat was doing structural work anyway. The egg white replaces it as a binder for free.

Beef Filling

- ◆½ sweet onion, diced (60g)
- ◆1 egg white (the binder — don't skip it)

- ◆Southwest seasoning, or Montreal steak seasoning, or salt + pepper + garlic + paprika
The Rest

- ◆½ cup (56g) low-fat mozzarella (or cheddar, or both)
- ◆1 extra egg white, for brushing
- ◆0-cal cooking oil spray
- ◆Parsley, garlic, red wine vinegar, lemon juice, a restrained pour of olive oil
Instructions

Mix the filling — beef, jalapeño, onion, parsley, seasoning, and 1 egg white. Mix until sticky and uniform. It should feel tacky, not crumbly.

Egg wash the tortillas — brush each one lightly with egg white. This is what makes raw beef stick to a smooth tortilla instead of sliding off as you roll.

Spread thin — ¼ lb (113g) of beef per tortilla, edge to edge, as thin as you can get it. Thin is not optional — thick beef won't cook through before the tortilla burns.

Roll tight, then slice into 6–8 pinwheels.

Cook — air fry 350°F, 10–14 min, flipping halfway. Or bake 375°F, 15–20 min. Beef should hit 165°F.

Finish — cheese on top, back in until it melts. Serve with chimichurri or salsa.
🧠 Why This Works
The egg white is doing two different jobs, and both matter. Mixed into the beef, its proteins coagulate as they heat and knit the lean grind together — that's the binding job the fat in 80/20 beef would normally do. Brushed onto the tortilla, it acts as glue so the raw beef adheres to a slick surface long enough to roll without tearing. Spreading the beef thin means it cooks through in the same window the tortilla needs to crisp, which is the whole reason this technique works at all.
