Morning-Roll Lore
Crispy outside, molten cheesy inside, loaded with protein and sliceable like a real stromboli. This is a weekend recipe, not a Tuesday recipe — and this page will be straight with you about why.

✂️ Trim Trim Trim
Turkey bacon and turkey breakfast sausage over their pork counterparts is the big lever here — and going egg whites (or egg substitute) instead of whole eggs drops 300 calories and 23g of fat off the filling while keeping every gram of the protein.
Ingredients
Use-what-you’ve-got friendly.
Sorted by dish, with the spices you probably already own kept separate.
Eggs — pick one
- ◆4 large whole eggs (200g) — richest
- ◆120g egg whites (4 whites) — macros below use this
- ◆120g egg substitute (½ cup)
The Filling
- ◆¼ cup (60ml) fat-free milk
- ◆4 slices (40g) turkey bacon, cooked and chopped
- ◆4 oz (113g) turkey breakfast sausage, cooked and crumbled
- ◆½ cup (56g) low/no-fat cheddar
- ◆½ cup (56g) low/no-fat mozzarella
- ◆Optional: ½ cup (60g) sautéed onions + peppers
- ◆1 tbsp spicy light mayo
- ◆1 tbsp (14g) melted light butter
- ◆Salt, pepper, everything bagel seasoning
Wrapper — pick one
- ◆1 store-bought pizza dough (~900 cal) — the classic
- ◆1 store-bought pie crust (~800 cal)
- ◆4 large low-carb tortillas (~280 cal total) — the everyday move
Instructions
- 1
Preheat oven to 375°F. Line a baking sheet with parchment.
- 2
Scramble — whisk eggs, milk, salt, pepper. Cook until just set (slightly underdone; they'll finish in the oven).
- 3
Roll dough into a 12×14" rectangle.
- 4
Layer in this order: spicy mayo, scrambled eggs, sausage, bacon, cheddar, mozzarella, optional veg.
- 5
Brush edges with melted butter.
- 6
Roll tightly from the long side. Pinch the seam, tuck the ends under.
- 7
Brush the top with remaining butter, hit it with everything bagel seasoning.
- 8
Bake 25-30 min until golden and bubbling.
- 9
Cool 10 min before slicing — this matters, or the filling runs out.
🧠 Why This Works
Scrambling the eggs to just set (not fully cooked) means they finish in the oven instead of turning rubbery — the single most common mistake in any baked egg dish. The cheese layer sitting directly against the dough creates a moisture barrier, which is what keeps the bottom crust from going soggy under all that filling.
🌶️ Flavor Boosters
Extra everything bagel seasoning • hot sauce at the table • pickled jalapeños in the filling • a swipe of extra spicy mayo for dipping
🔄 Use What You’ve Got
- —Whole eggs instead of whites? Adds ~300 cal and 23g fat across the whole roll — richer, still good, just know the trade
- —No turkey sausage? Any lean breakfast sausage, or extra turkey bacon
- —No everything bagel seasoning? Sesame seeds + dried onion + poppy seeds + coarse salt
- —No pie crust or dough on hand? See the tortilla version above — it's the better macro play anyway
📦 Meal Prep Notes
Keeps 3 days refrigerated • Reheat slices at 350°F for 8-10 min (microwave makes the crust sad) • The tortilla/burrito version freezes beautifully — wrap individually, reheat from frozen in the air fryer, 375°F, 8-10 min
