Baked, not fried, is the whole game here — a proper breaded-and-baked crust gets you the crunch of fried chicken for a fraction of the oil. Light Caesar dressing (Greek yogurt-forward, not straight mayo) is the second lever, same principle as every dressing in this book.

Ingredients

Chicken

  • 4 chicken breasts, flattened
  • 2 eggs, beaten
  • 1 cup (120g) breadcrumbs — regular, panko, crushed cornflakes, a Parmesan-panko hybrid, or skip the breading entirely for a no-crumb air-fry version
  • 2 tsp Cajun seasoning • 2 tsp paprika • 2 tsp garlic granules • salt + pepper
  • 0-cal cooking oil spray

Greens (pick any — 2 large handfuls / ~40g per handheld)

  • ½ cup (150g) nonfat Greek yogurt
  • 3 tbsp (45g) light mayo
  • 1 tsp (5g) Dijon mustard
  • 1 tbsp (15ml) Worcestershire sauce
  • ⅓ cup (40g) grated Parmesan
  • Black pepper • ⅛ tsp garlic granules

Bread — pick one

  • Ciabatta panini roll, whole (90-100g)
  • Ciabatta, hollowed out (remove ~⅓ of the interior)
  • Large low-carb tortilla (50g)

Instructions

    Mix breadcrumbs with all seasonings in a bowl.

    Dip flattened chicken in egg, coat in the crumb mixture, press firmly to adhere.

    Bake: 350°F, 25-30 min, light oil spray partway through, until golden and cooked through.

    Whisk all dressing ingredients together.

    Toss greens with ¼ cup dressing per handheld.

    Assemble: bread, dressed greens, sliced crispy chicken, extra dressing and Parmesan on top.

🧠 Why This Works

A proper egg-then-crumb double coat, baked hot with a light oil spray, browns and crisps almost the same way frying does — the Maillard reaction doesn't require submersion in oil, just enough surface heat. Splitting the Caesar dressing between Greek yogurt and a smaller amount of light mayo keeps the classic richness while making protein, not fat, the dominant macro.

  • No specific breadcrumb on hand? Any of the five options listed work interchangeably — texture varies, macros stay close
  • No Dijon? Yellow mustard, same amount
