The two massive calorie bombs in traditional wings are the fatty, skin-on dark meat and the sauce (which is usually a 1:1 ratio of hot sauce to full-fat butter). We fix the meat by swapping to 99% lean ground chicken, which is basically pure protein. For the sauce, we keep the classic Frank's RedHot but cut it with just 2 tablespoons of light butter (or Greek yogurt) for the entire batch. You still get that glossy, mouth-coating buffalo finish, but you save hundreds of calories in fat.

The Meatballs

  • 16 oz / 454 g ground chicken (99% lean)
  • ½ cup panko breadcrumbs (use crushed pork rinds to drop carbs)
  • 1 large egg
  • 1 tsp garlic powder • 1 tsp onion powder • ½ tsp salt

The Buffalo Sauce

  • ⅓ cup buffalo hot sauce (like Frank's RedHot)
  • 2 tbsp light butter (or plain nonfat Greek yogurt for extra protein)

Garnish

  • 2 tbsp light blue cheese crumbles
  • 2 green onions, sliced

Instructions

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil sprayed with a little cooking spray.

    In a large bowl, combine the ground chicken, panko, egg, garlic powder, onion powder, and salt. Mix gently with your hands until just combined — don't overwork the meat or the meatballs will get tough.

    Roll the mixture into 1-inch meatballs (you should get about 16–20) and space them evenly on the baking sheet.

    Bake for 18–20 minutes, or until cooked through and lightly browned on the outside (internal temp 165°F).
