The lever here is the sauce. Heavy cream is swapped for a powerhouse trio: 0% Greek yogurt for protein and tang, fat-free cream cheese for body, and fat-free milk thickened with a touch of cornstarch to prevent the dairy from breaking. We also swap oil-packed sun-dried tomatoes for dry-packed, eliminating hundreds of hidden oil calories, and use shaker Parmesan instead of freshly grated to get that salty, cheesy punch for a fraction of the fat.

Chicken

  • 24 oz / 680 g raw chicken breast (about 4 large or 6 small breasts)
  • 1 tsp salt • 1 tsp black pepper • ½ tsp paprika

Slow Cooker Base

  • 2 ½ cups reduced-sodium chicken broth
  • ½ cup dry-packed sun-dried tomatoes, chopped
  • 6 cloves garlic, minced
  • 1 tsp Italian seasoning • ½ tsp crushed red pepper

  • 4 oz fat-free cream cheese — use what you got: light or whipped works too, it just adds ~30 cal and ~4g fat per serving
  • ½ cup 0% Greek yogurt
  • ¾ cup fat-free milk
  • 1 tbsp cornstarch
  • ½ cup shaker Parmesan (plastic jug style — very low calorie)
  • 3 cups baby spinach

The Bowl

Instructions

    Season the chicken breasts evenly with salt, pepper, and paprika.

    In a slow cooker, combine the chicken broth, chopped sun-dried tomatoes, minced garlic, Italian seasoning, and crushed red pepper.

    Submerge the seasoned chicken directly into the broth mixture (no searing needed). Cover and cook on LOW for 4 hours or HIGH for 2.5–3 hours, until the chicken reaches 165°F.

    Remove the chicken to a cutting board or plate and cover to keep warm.

    Whisk the cornstarch into the cold fat-free milk to create a slurry. Add the slurry, fat-free cream cheese, Greek yogurt, shaker Parmesan, and spinach into the slow cooker liquid.

    Turn the slow cooker to HIGH and cook for 10–15 minutes, whisking occasionally, until the spinach is wilted and the sauce is smooth, creamy, and thickened.

🧠 Why This Works

The magic is in the dairy blend. Greek yogurt alone will curdle in a hot slow cooker, but when stabilized by the cornstarch slurry and the emulsifiers in the fat-free cream cheese, it creates a velvety, rich sauce that mimics heavy cream perfectly. Dry-packed sun-dried tomatoes rehydrate in the broth, releasing all their concentrated umami directly into the sauce instead of trapping it in a jar of oil.

🔄 Use What You’ve Got

  • Can't find dry-packed tomatoes? Use oil-packed, but rinse them thoroughly under hot water and pat dry to strip the excess oil.
  • No fat-free cream cheese? Light or whipped cream cheese works perfectly and melts even faster — it costs you about 30 cal and 4g fat per serving, which is a fine trade for using what you already have.
  • Base swaps: Carbé Diem pasta, standard long-grain rice, cauliflower rice (to drop carbs further), or even roasted potatoes.
