Angry sauce. Calm macros.

Chicken Italian Sausage Arrabbiata Bake

Sunday-Gravy Lore

"Arrabbiata" means angry in Italian — all fire, garlic, and crushed red pepper. This bake channels that heat into a cheesy, protein-loaded pasta dinner that's built for four days of lunches, not just one Sunday.

The Numbers Up Front

Total Cooked Yield: ~146 oz / 4140 g (this is a BIG batch — plan for a crowd or a full week of prep)

That's: twelve 12 oz portions, or eight generous 18 oz family-style portions

Default Portion: 10 oz / 283 g

⚠️ Note: the original notes estimated ~4 servings at 8–10 oz — once every ingredient is weighed honestly (cooked pasta, cooked chicken, all the dairy), this batch is genuinely bigger than that. Good news for your freezer.

✂️ Trim Trim Trim

93% lean beef + chicken Italian sausage is the one-two punch here — swapping either for their fattier cousins (80/20 beef, pork sausage) adds real calories fast. The recipe as written already runs lean; don't undo it at the meat counter.

Ingredients

Use-what-you’ve-got friendly.

Sorted by dish, with the spices you probably already own kept separate.

  • 1 lb 93% lean ground beef
  • 2 links chicken Italian sausage, casings removed
  • ¾ cup onion + bell pepper, diced
  • 1 heaping tsp minced garlic
  • Handful fresh spinach
  • ¾ cup low-fat ricotta
  • 2 sticks light string cheese, chopped
  • 5 oz dry Carbe Diem pasta
  • 1 cup arrabbiata sauce (jarred or homemade)
  • Italian seasoning + fresh basil, to taste

Instructions

  1. 1

Brown the beef and sausage together, breaking it up as it cooks. Drain if needed.

  2. 2

Sauté onion, pepper, and garlic into the meat until softened.

  3. 3

Stir in arrabbiata sauce and ricotta, simmer 5 min.

  4. 4

Fold in wilted spinach and chopped string cheese.

  5. 5

Cook pasta separately per package directions, fold into the sauce.

  6. 6

Finish with Italian seasoning and torn basil.

🧠 Why This Works

Blended ricotta and chopped string cheese give two different textures of cheesy payoff — smooth body from the ricotta, gooey pockets from the string cheese — without needing a full cup of shredded mozzarella. Carbe Diem holds its bite through a week of reheats better than regular pasta.

🌶️ Flavor Boosters

Extra crushed red pepper • fresh parsley • a splash of balsamic in the sauce • mushrooms or zucchini for free volume

🔄 Use What You’ve Got

  • No Carbe Diem? Regular pasta works — carbs will run higher, nothing to freak out about
  • No string cheese? Skip it, use a bit more ricotta instead
  • Ground turkey instead of beef? Straight swap, similar macros
  • No fresh spinach? Frozen, thawed and squeezed dry

📦 Meal Prep Notes

Keeps 4–5 days refrigerated • Freezes well in individual portions, up to 2 months • Reheat with a splash of water or extra sauce to loosen
