Ground chicken breast keeps this lean from the start — no visible fat to trim here, the lean grind IS the trim. If your store only carries regular ground chicken (thigh-blend), expect a few extra grams of fat per kebab — nothing to freak out about, just know breast-only grind is the leanest path.

Kebabs (makes 4)

- ◆Garlic powder, onion powder, cumin, paprika, salt + pepper
- ◆Optional: fresh parsley, lemon zest in the mix

Instructions

Form kebabs — mix ground chicken with seasonings, shape into 4 logs or patties.

Cook — grill, skillet, or air fry 380°F, 10–12 min, flipping halfway, until charred and cooked through.

Make the tzatziki — combine all ingredients, chill.

Make the salad — toss tomatoes, onion, parsley, lemon, olive oil, salt, sumac.

Assemble — warm the tortilla, add kebab, tzatziki, salad. Roll tight.

Ground chicken breast picks up char and smoke flavor just like lamb or beef kebab does — the seasoning and the sear are doing the work, not the fat content. Sumac's tart citrus-like punch replaces the richness you'd otherwise need extra oil for.
