Instructions

Cook pasta per package directions, drain, reserve a splash of pasta water.

In a saucepan, melt light butter, sauté garlic 30 sec.

Whisk in milk and light cream cheese until smooth and simmering.

Stir in parmesan until melted into a glossy sauce. Thin with pasta water if needed.

Serve with a generous spoonful of chili crisp over each bowl — don't stir it all the way in, let people control their own heat.

Light cream cheese brings the same body and tang that heavy cream provides, at a fraction of the fat, and parmesan does the heavy lifting on flavor so the sauce doesn't need to be rich to taste rich.
