Southwestern Breakfast-For-Dinner Omelet
It's Eggselent. π₯

Hard-Day Lore
For the nights when work wrecked you and the last thing on earth you want to do is "cook." This is the answer: one skillet, five minutes of actual effort, and a protein count that makes it a real dinner, not a cop-out.

Yield: 1 full loaded omelet β 14.4 oz / 410 g
Default Portion: the whole thing β this is dinner, not a snack
βοΈ Trim Trim Trim
Chicken breakfast sausage over pork saves real fat before you even crack an egg, and folding in liquid egg substitute alongside one whole egg keeps the richness of a real yolk while stretching the protein without stacking up cholesterol and fat from a pile of whole eggs.
Ingredients
Use-what-youβve-got friendly.
Sorted by dish, with the spices you probably already own kept separate.
- β1 whole egg + Β½β1 cup liquid egg substitute
- βOnion + bell pepper, diced, softened in a skillet
- β2β3 frozen chicken breakfast sausage links, microwaved and chopped
- β2 tbsp fat-free shredded cheddar
- β2 tbsp salsa
- βSouthwestern seasoning (cumin, chili powder, garlic powder, smoked paprika)
- βCholula hot sauce, to taste
- βSalt + pepper
Instructions
- 1
Soften onion and pepper in a skillet, set aside.
- 2
Microwave the sausage links 1 min, chop into small pieces.
- 3
Beat the egg + egg substitute, season with salt and pepper.
- 4
Pour eggs into the skillet. Once firming up, load one half with sausage, veg, cheese, and salsa.
- 5
Fold the naked half over the fillings. Let it sit a minute, then flip the whole omelet to finish the other side.
- 6
Dust with Southwestern seasoning, finish with Cholula.
π§ Why This Works
Liquid egg substitute is basically pure egg white protein without the shell-cracking hassle, and mixing it with just one whole egg keeps that real-egg richness in every bite instead of tasting like an all-white omelet. The fold-then-flip technique means the filling gets fully sealed inside instead of spilling everywhere β the actual "technique" in an otherwise zero-technique dinner.
πΆοΈ Flavor Boosters
Extra Cholula (obviously) β’ diced jalapeΓ±o in the veg mix β’ a pinch of cumin in the eggs themselves β’ fresh cilantro to finish
π Use What Youβve Got
- βNo chicken breakfast sausage? Any lean breakfast sausage or even leftover shredded chicken works
- βNo egg substitute? All whole eggs works too β richer, more fat, still delicious
- βNo fat-free cheddar? Any shredded cheese, straight swap, a few extra calories
- βNo Southwestern seasoning blend? Cumin + chili powder + garlic powder gets you there
π¦ Meal Prep Notes
Best made fresh β omelets don't reheat well β’ If you're batching, keep the sausage/veg/cheese mix prepped ahead so assembly is genuinely 5 minutes
