The whole internet is spinning protein ice cream right now — half the calories, double the protein, the "light ice cream" setting doing all the work. So here's a flavor I hadn't seen anywhere: cinnamon bun. Real cinnamon-roll taste, an entire pint for the calories of a granola bar, and no $250 name-brand machine required — an off-brand spinner does the exact same job.

There's almost nothing left to trim — fat-free ultra-filtered milk is doing the work heavy cream does in real ice cream, protein muffin mix carries flavor AND protein instead of just sugar, and an erythritol-based sweetener means the "sugar" here doesn't even count toward net carbs. This is about as lean as a real dessert gets.

Instructions

Whisk everything together until fully smooth — no dry pockets of xanthan gum (it clumps if rushed).

🧠 Why This Works
Fairlife's ultra-filtration concentrates protein and removes sugar, so it's thick and creamy enough to stand in for the fat that makes normal ice cream smooth. Xanthan gum is the real MVP — a tiny amount traps water and stops large ice crystals from forming, which is the entire difference between "creamy scoop" and "block of flavored ice." The erythritol sweetener adds bulk and sweetness without digestible carbs, so it sweetens without the calorie cost.
