Nothing to trim — protein powder and PB2 are already the lean choice standing in for what would otherwise be straight peanut butter and sugar. The coconut oil is the one real fat in this recipe, and it's there on purpose, doing the job of making the chocolate shell actually set and snap like a real shell.

- ◆¼ cup peanut butter powder (PB2)
- ◆1-2 tbsp fat-free milk or zero-sugar creamer
- ◆1 scoop vanilla protein powder (or 1 tsp vanilla extract for a lower-protein, lower-calorie version — see Use What You've Got)
- ◆1 tsp stevia or sweetener
- ◆1 tbsp milk chocolate chips
- ◆1 tsp coconut oil
- ◆Optional: 6-8 peanut butter chips, folded into the filling
Instructions

PB filling — mix PB2 with milk/creamer until creamy. Add yogurt, sweetener, and protein powder (or vanilla extract). Fold in PB chips if using. Texture should be thick, sweet, PB-cup-like.

Melt the chocolate — microwave chocolate chips and coconut oil in 20-30 second bursts, stirring between, until smooth.

Build — spread PB filling into 2 cavities of a silicone mold or 2 small dishes. Pour melted chocolate over the top.

Freeze — 20-30 min, until the chocolate shell is fully set.
🧠 Why This Works
Protein powder does what powdered sugar and extra peanut butter would otherwise do in a real PB cup filling — bulk and sweetness — while actually building the macro profile the other direction. Coconut oil is what makes melted chocolate chips re-set into a real snap-when-you-bite-it shell instead of staying soft; skip it and the chocolate stays fudgy instead of shell-like.
