Slice — cut each potato into 6-8 wedges depending on size.

Boil briefly — bring water to a boil, add salt and vinegar, add wedges. Small wedges: 4 min. Large wedges: 5-6 min. Fork test: it should slide in easily, but the wedge shouldn't be falling apart.

Dry + cool — drain thoroughly, spread out, let cool 5-10 min. This step is non-negotiable — the surface starch needs to go tacky for real crisping to happen.

Season — toss with the Cajun blend. Extra smoked paprika for color and a spray of butter-flavored 0-cal spray for aroma are both optional upgrades.

Crisp — light spray of 0-cal oil. Air fry 400°F, 12-16 min, shaking halfway. Or bake 425°F, 25-30 min, flipping once.

Vinegar in the boiling water slows the breakdown of pectin in the potato's cell walls — that's the actual mechanism behind wedges that hold their shape instead of turning to mush, not a kitchen myth. The brief parboil gelatinizes the starch on the surface; cooling lets that starch turn tacky, which is what the seasoning actually sticks to and what crisps hardest in the air fryer. The sugar substitute in the blend does what real sugar does in commercial fry seasoning — a faint caramelized sweetness — without the carbs.
