Ingredients

Sorted by dish, with the spices you probably already own kept separate.

  • 1.5 lb potatoes, any variety, sliced into rounds
  • 2 tbsp kosher salt + 2 tbsp white vinegar (for the boil)
  • 1 sweet onion, thinly sliced
  • 1-2 tsp garlic powder • ½ tsp onion powder • ½ tsp black pepper
  • 1-2 tbsp Parmesan, finely grated
  • 0-cal cooking oil spray
  • Optional: parsley, chives, butter-flavored spray

Instructions

    Slice into rounds — paper-thin (1/16"): stack 8-10 slices per patty. Thin (⅛"): stack 5-7. Thick (¼"): stack 2-4.

    Boil — once at a full boil, cook slices 3-5 min depending on thickness. Fork should slide in easily, slices should still hold shape.

    Drain + cool — this activates the natural starch tackiness that holds the stack together.

    Season — toss slices with garlic powder, onion powder, pepper, Parmesan, and sliced onion.

    Form — stack slices by thickness, press gently. The potato starch does the binding — no egg, no melted cheese required.

    Air fry — 400°F, 10-14 min, flipping halfway. Or bake 425°F, 18-22 min.

    Finish — extra Parmesan and parsley while hot.

🧠 Why This Works

Potatoes contain two starches, amylose and amylopectin, that change texture with heat and cooling. Boiling triggers gelatinization — the starch swells and softens, creating surface stickiness. Cooling lets that stickiness set into real tackiness, almost like edible glue. Compression (pressing the slices together) increases contact between sticky surfaces, strengthening the bond. Air frying crisps the outside and locks the whole structure in place. No melting, no cheese glue — just potato physics.
