Two levers do the heavy lifting. Carbe Diem pasta in place of fettuccine takes a 2 oz serving from ~200 cal / 40g net carb down to ~110 cal / 16g net carb — a whole meal's worth of carbs gone with no change to the plate. And the alfredo is rebuilt on nonfat milk and blended low-fat cottage cheese instead of heavy cream, with just enough real parmesan to taste like the restaurant. Cottage cheese blends to a thicker, glossier sauce than yogurt and carries more protein for the same calories. Pork panko binds the meatballs so the crumb isn't wasted calories.

Meatballs

  • 5 oz / 140 g 93% lean ground beef
  • ½ egg (or 1 egg white)
  • 2 tbsp grated parmesan
  • 2 tbsp pork panko (or regular breadcrumbs)
  • 1 tsp Italian seasoning • 2 cloves garlic, minced • salt & pepper
  • 0-cal olive oil spray (for cooking)

Pasta

  • 2 oz / 56 g Carbe Diem pasta (uncooked)

Alfredo Sauce

  • ½ cup nonfat milk
  • ¼ cup nonfat or low-fat cottage cheese, blended smooth (see step 4)
  • 2 tbsp grated parmesan
  • 1 clove garlic, minced • ¼ tsp Italian seasoning • salt & pepper

To Finish

  • Fresh parsley, chopped

Instructions

    Cook the Carbe Diem pasta to package directions. Drain and set aside.

    Mix beef, egg, 2 tbsp parmesan, pork panko, Italian seasoning, garlic, salt, and pepper. Roll into 6–8 meatballs.

    Spray a skillet, cook meatballs over medium 8–10 min, turning, until browned and cooked through. Remove.

    Blend the cottage cheese with the nonfat milk until completely smooth — this is not optional; unblended cottage cheese stays grainy and will not turn into alfredo. Then, in the same skillet on low, cook minced garlic 30 sec, pour in the blended sauce, and add 2 tbsp parmesan, Italian seasoning, salt, and pepper. Whisk until smooth and creamy — don't boil, or it can split.

    Toss the pasta in the sauce, nestle the meatballs back in, spoon sauce over. Finish with parmesan and parsley.

Alfredo's calories are cream and pasta, not flavor. Nonfat milk plus blended cottage cheese gives you a genuinely creamy, glossy sauce — thicker than a yogurt sauce and less prone to splitting, and a small amount of real parmesan carries all the salty, nutty punch your tongue is actually looking for.
