✂️ Trim Trim Trim
Sirloin is already a lean cut — trim any visible fat seams before marinating, and consider air frying instead of pan-frying in oil to drop even more fat without losing the char.
Ingredients
Use-what-you’ve-got friendly.
Sorted by dish, with the spices you probably already own kept separate.
- ◆1 lb beef sirloin, trimmed, cut into bite-sized pieces
- ◆¼ cup soy sauce (low-sodium works)
- ◆2 tbsp brown sugar
- ◆2 tbsp sesame oil
- ◆4 cloves garlic, minced • 1 tbsp fresh ginger, minced
- ◆1 tbsp rice vinegar • ½ tsp black pepper
- ◆1 tbsp oil for the pan (or skip it and air fry instead)
- ◆¼ cup sweet chili sauce
- ◆1 tbsp sriracha (optional, for heat)
- ◆Green onions + sesame seeds, for garnish
Instructions
- 1
Whisk soy sauce, brown sugar, sesame oil, garlic, ginger, rice vinegar, and pepper. Toss with beef, marinate 30 min to 2 hrs refrigerated.
- 2
Heat oil in a skillet over medium-high (or skip oil and air fry at 400°F, 8–10 min, shaking halfway).
- 3
Sear beef in a single layer, 3–4 min per side, in batches if needed.
- 4
Mix sweet chili sauce and sriracha. Return all beef to the pan, toss in the sauce, heat through 1 min.
- 5
Garnish with green onion and sesame seeds. Serve over rice or in lettuce wraps.
🧠 Why This Works
Marinating first means the flavor builds from the inside, so the finishing sauce only needs to add glaze and shine, not the entire flavor profile — that's what keeps the sugar content from needing to be as high as most bottled Korean BBQ sauces.
🌶️ Flavor Boosters
Extra sriracha • toasted sesame oil drizzle at the end • a squeeze of lime
🔄 Use What You’ve Got
- —No sirloin? Flank steak or lean sirloin tips both work well
- —No fresh ginger? ¼ tsp ground ginger
- —Want it leaner still? Air fry instead of pan-frying in oil — see instructions above
📦 Meal Prep Notes
Keeps 4 days refrigerated • Great over rice, in lettuce wraps, or straight as a protein-forward snack • Reheats well in a hot skillet or air fryer
