Rump roast is already a lean cut, and skimming the fat off the reserved cooking liquid before it goes back into the consommé is the real lever here. Skip the skimming and you'll still eat well — just budget a bit more fat per serving, roughly 8g more if you pour it all back in unskimmed.

Instructions

Blend chipotles, crushed tomatoes, garlic, onion, salt, pepper, chili powder, cumin, cinnamon, and broth until smooth.

Pat the roast dry, place in the slow cooker, pour the marinade over, add bay leaves.

Cook on LOW 8 hrs (or HIGH 4-5 hrs) until fork-tender.

Remove the roast, shred with two forks. Strain and skim the fat from the cooking liquid — this is the trim step that matters most. Discard bay leaves.

Preheat broiler on high, or air fryer to 400°F.

Sprinkle ½ oz mozzarella on each tortilla. Broil 1-2 min (air fryer: 2-3 min) until melted and the tortilla starts to crisp.

Return to the broiler or air fryer 1-2 min per side until golden and crispy at the edges.

Consommé: combine 1 heaping tbsp reserved cooking liquid with 2 tbsp hot beef broth per serving. Serve piping hot alongside for dipping.
