Lean Crockpot Swedish Meatballs
IKEA could never.

Nordic Lore
Swedish meatballs the way you wish they were served growing up β creamy, cozy, and somehow packing more protein than a gym bag. No frozen bag-balls. No cream-and-butter ambush.
Portion Matrix (Finished Dish: Meatballs + Sauce + Pasta)
Lean Crockpot Swedish Meatballs
21g (12g net) β total for the trackers, net for the low-carbers.
Tap a portion size. Watch the numbers move. Thatβs the whole book.
Macros: USDA FoodData Central + Carbe Diem label (110 cal, 8g protein, 40g carbs / 24g fiber per 2 oz dry) β’ finished-dish weight including sauce β’ net carbs = total minus fiber.
The Numbers Up Front
Total Cooked Yield: ~91 oz / 2580 g finished dish (β32 meatballs + sauce + pasta)
That's: nine 10 oz dinners β feed the family AND fill the prep containers
Default Portion: 10 oz / 283 g
βοΈ Trim Trim Trim
The blend is the trim: 93% lean beef + 96% lean turkey. The beef brings the flavor, the turkey brings the macros β together they beat an all-80/20 version by ~10g of fat per 10 oz portion before the sauce even enters the chat.
Ingredients
Use-what-youβve-got friendly.
Sorted by dish, with the spices you probably already own kept separate.
Meatballs (makes ~32)
- β1 lb 93% lean ground beef + 1 lb 96% lean ground turkey
- βΒ½ cup panko β’ 1 egg β’ 1 tbsp Worcestershire
- β1 tsp onion powder β’ 1 tsp garlic powder β’ Β½ tsp salt β’ Β½ tsp pepper
Sauce
- β10 oz can cream of mushroom soup (light)
- β2 cups beef broth β’ 1 tbsp Worcestershire β’ 1 tbsp steak sauce β’ 1 tbsp Dijon
- β1 tsp parsley flakes β’ 1 tsp onion powder β’ 1 tbsp minced garlic β’ 1 medium onion, chopped
- βΒ½ cup low-fat sour cream (stirred in at the end)
Pasta
- β12 oz Carbe Diem fettuccine (high-protein pasta)
Instructions
- 1
Mix + roll β combine meatball ingredients, roll ~32 balls, place raw straight into the crockpot.
- 2
Build the sauce β everything except sour cream over the top. Stir gently.
- 3
LOW 4β6 hours until tender.
- 4
Finish β cook pasta separately. Stir sour cream into the pot, fold in pasta. Parsley + cracked pepper.
π§ Why This Works
Raw meatballs poaching directly in the sauce means the meat juices become the gravy β flavor you'd normally get from butter, for free. High-protein pasta holds the egg-noodle vibe without the egg-noodle macros, and the sauce thickens as it cools (meal prep loves this).
πΆοΈ Flavor Boosters
Pinch of nutmeg or allspice in the meatballs (the classic Swedish move) β’ extra Dijon β’ splash of Worcestershire at serving β’ cracked pepper avalanche
π Use What Youβve Got
- βNo Carbe Diem? Any high-protein pasta, or regular egg noodles (+45 cal per 10 oz)
- βNo light cream of mushroom? Regular (+10 cal per 10 oz) or golden mushroom
- βAll-beef or all-turkey? Both work β all-turkey drops ~3g fat per 10 oz, all-beef adds ~3g
- βNo crockpot? Dutch oven, covered, 300Β°F for 90 min
π¦ Meal Prep Notes
Keeps 4 days β’ Sauce thickens overnight β better on day two β’ Reheat with a splash of broth β’ Bowl build: 4β5 meatballs + ΒΎ cup sauce + pasta + steamed green beans for free volume
