Chuck is flavor country, but it hides fat everywhere. Trim every visible seam before it hits the cooker, then skim the braising liquid before re-saucing. - ◆2 tsp kosher salt • 1½ tsp black pepper • 2 tsp smoked paprika • 2 tsp cumin • 1 tsp oregano • 1 tsp onion powder • 1 tsp garlic powder

Instructions

Layer onion + garlic in the bottom of the slow cooker.

Whisk broth, tomato paste, Worcestershire, soy, vinegar.

Rub the dried roast all over with the spice mix.

Load roast on the onions; pour liquid around it (keep the rub intact).

Cook LOW 8–10 hrs or HIGH 5–6, until it shreds easily.

Defat + shred — shred the beef; strain and skim the liquid (fat separator or quick chill), then moisten the meat with the defatted liquid. Adjust salt + a squeeze of acid.

The seasoning is loud enough to be delicious solo but neutral enough to pivot — no cinnamon locking you into one cuisine, no BBQ sauce locking you into another. Tomato paste + soy + Worcestershire stack three layers of umami so lean, defatted beef still tastes rich.
