✂️ Trim Trim Trim

Ingredients
Use-what-you’ve-got friendly.
Sorted by dish, with the spices you probably already own kept separate.
Pinwheel Roll
- ◆1 large low-carb burrito wrap (≈90 cal)
- ◆½ lb / 226 g 93% lean ground beef
- ◆¼ cup diced onion • 2–3 tbsp diced tomato, squeezed dry
- ◆¼ cup fat-free shredded cheddar
- ◆Salt + pepper • pinch cayenne • pinch Cajun seasoning
- ◆1 tbsp Big Mac-style sauce (binder)
- ◆2 tbsp nonfat Greek yogurt • 1 tbsp light mayo
- ◆1 tsp mustard • 1 tsp ketchup • 1 tsp pickle juice • 1 tbsp minced pickles
- ◆Paprika, garlic powder, onion powder • optional tiny pinch sweetener
- ◆6–8 honey gold baby potatoes • salt + pepper • garlic powder • cooking spray • 1–2 tbsp grated parmesan or low-fat mozzarella
Instructions — Raw → Roll → Slice → Air Fry
- 1
Mix raw beef, onion, tomato, cheddar, seasonings + 1 tbsp sauce until cohesive.
- 2
Spread in a thin, even layer (⅛–¼") on the wrap, ½" border on the far edge.
- 3
Roll + Chill tightly, wrapped, 15–20 min to firm.
- 4
Slice into 1–1¼" pinwheels with a serrated knife.
- 5
Air fry 380°F, 8–10 min, flip halfway, light spray for crisp.
- 6
Potatoes: boil 10–12 min → smash with a glass → season + spray → air fry 400°F 10–12 min → cheese in the last 2 min.
- 7
Serve with the sauce for dunking.
🧠 Why This Works
A thin raw beef layer fuses with the cheese and sauce as it cooks, so each spiral sets like a smashburger cross-section. The low-carb wrap crisps like a fried shell without the fryer. Everything indulgent about a burger, engineered.
🌶️ Flavor Boosters
Extra pickles • diced jalapeño in the filling • smoked paprika in the sauce • everything-bagel seasoning on the potatoes
🔄 Use What You’ve Got

📦 Meal Prep Notes
Roll and chill up to 24 hrs ahead — slice and fry fresh • Cooked pinwheels keep 3 days; re-crisp 375°F, 4–5 min • Sauce keeps 5 days
