This one keeps the garlicky, Parmesan-savory backbone and lets protein, not oil, carry the weight. 🧠 Why This Works
Traditional Caesar leans on oil and egg yolk for its body; here nonfat Greek yogurt does the emulsifying and the light mayo supplies just enough fat memory to read as the real thing. Worcestershire delivers the funky, salty umami that anchovies normally provide, and real grated Parmesan carries the flavor that no low-fat shortcut can fake — a little goes a long way spread across the whole cup.
