Low-Cal Big Mac Sauce

The drive-thru's best-kept secret, minus the secret shame.

Low-Cal Big Mac Sauce

Special-Sauce Lore

It was never "special." It was just mayo wearing a disguise. We kept the tang, the color, the pickle-y punch — and sent the 90-calorie fat bomb back through the window. (Lives inside the Hamburger Pinwheel Spirals page — now it has its own home so you can put it on everything else too.)

Tap a portion size. Watch the numbers move. That’s the whole book.

Real batch is ~2.8 oz — nobody eats 12 oz of burger sauce. This is the per-ounce math scaled up so you can size any batch and still trust the numbers.

The Numbers Up Front

Yield: ~2.8 oz / 80 g (about 5 tbsp)

Default Portion: 2 tbsp

Per 2 tbsp: 25 cal • 2g protein • 2g fat • 2g carbs (about 13 cal per single tbsp — the way it actually rides on a burger)

✂️ Trim Trim Trim

Nothing to trim, everything to swap. The whole move is splitting the base: mostly nonfat Greek yogurt, just a tablespoon of light mayo for the classic mouthfeel. That single swap is a ~65-calorie, 7g-fat cut per 2 tbsp versus real special sauce.

Ingredients

Use-what-you’ve-got friendly.

Sorted by dish, with the spices you probably already own kept separate.

  • 2 tbsp nonfat Greek yogurt
  • 1 tbsp light mayo
  • 1 tsp yellow mustard
  • 1 tsp ketchup
  • 1 tsp pickle juice
  • 1 tbsp minced dill pickles
  • Paprika, garlic powder, onion powder — a pinch each
  • Optional tiny pinch of sweetener (that faint drive-thru sweetness)

Instructions

  1. 1

Stir everything together in a small bowl.

  2. 2

Taste — more pickle juice for tang, more ketchup for sweetness, more paprika for color.

  3. 3

Rest 10 min in the fridge so the flavors marry. Done.

🧠 Why This Works

Real special sauce is mostly mayo, which is mostly oil — that's where the calories hide. Swapping the bulk to nonfat Greek yogurt keeps the creamy body and adds protein, while the tablespoon of light mayo carries just enough of the fatty richness your tongue is actually looking for. The pickle, mustard, and paprika do all the flavor work either way.

🌶️ Flavor Boosters

Smoked paprika for depth • extra minced pickle for crunch • a dash of hot sauce • finely minced white onion

🔄 Use What You’ve Got

  • No light mayo? All Greek yogurt works — a touch tangier, even lighter
  • No dill pickles? Relish, same amount (skip the extra sweetener)
  • No pickle juice? A splash of white vinegar

📦 Meal Prep Notes

Keeps 5 days refrigerated • Thickens as it sits — loosen with a few drops of pickle juice • Doubles and triples cleanly for burger week
