Ingredients

Sorted by dish, with the spices you probably already own kept separate.

  • 1 lb mahi mahi fillets (frozen is fine — thaw in the fridge overnight or in the bag itself)
  • 0-cal cooking oil spray
  • Store-bought blackening OR Cajun seasoning, generous sprinkle
  • Squeeze of lime or lemon juice (bottled is fine — fresh is better, use what you've got)

Instructions

    Morning: Spray fillets lightly with 0-cal oil, sprinkle generously with blackening or Cajun seasoning, squeeze lime or lemon over the top. Seal in a plastic bag, refrigerate.

    Evening: Broil in the oven (high, 4–5 min per side depending on thickness) or air fry at 400°F, 8–10 min, until it flakes easily with a fork.

    Squeeze a little extra citrus on top before serving.

🧠 Why This Works

The all-day marinate isn't really tenderizing tough fibers (mahi's already tender) — it's giving the seasoning and citrus time to actually penetrate instead of just sitting on the surface. Letting the bag do the "cooking prep" means dinner is genuinely a 10-minute job when you walk in the door.

Extra cayenne in the seasoning • fresh garlic if you've got 30 extra seconds • a pat of light butter or squeeze of Low-Fat Tangy Tartar Sauce at the end • extra citrus zest

  • No blackening seasoning? Cajun seasoning works identically — same category, same result
  • Fresh mahi instead of frozen? Even better, same method, skip the overnight step
