Zingy Baby Gold Potato Salad

Tangy enough to make regular potato salad boring by comparison.

Zingy Baby Gold Potato Salad

Backyard Lore

Every potato salad recipe swears it's "the one." This one earns it — a yogurt-forward dressing with real tang, not just a mayo bath with a sprinkle of paprika on top.

✂️ Trim Trim Trim

The dressing does the trimming here: mostly nonfat Greek yogurt with just a touch of light mayo instead of a full mayo-based dressing is the entire reason this salad stays light without losing the creamy body a potato salad needs.

Ingredients

Use-what-you’ve-got friendly.

Sorted by dish, with the spices you probably already own kept separate.

Potatoes

  • 1½ lb baby gold potatoes, quartered and boiled until fork-tender

Zingy Dressing

  • ½ cup nonfat Greek yogurt
  • 2 tbsp light mayo
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp honey (optional)

Mix-Ins

  • 2 stalks celery, diced
  • ¼ cup red onion, diced
  • 2 tbsp fresh dill
  • Salt + pepper to taste
  • Optional: 2 slices turkey bacon, crumbled

Instructions

  1. 1

Boil quartered potatoes until fork-tender, drain, cool slightly.

  2. 2

Whisk yogurt, mayo, mustard, vinegar, and honey until smooth.

  3. 3

Toss warm potatoes with the dressing — they absorb more flavor warm than cold.

  4. 4

Fold in celery, onion, dill, and bacon if using.

  5. 5

Chill at least 2 hours, ideally overnight — this salad gets better with time.

🧠 Why This Works

Dressing the potatoes while they're still warm lets them soak up the tang instead of just wearing a coat of dressing on the outside. Greek yogurt brings the same creamy mouthfeel as mayo but adds real protein instead of just fat.

🌶️ Flavor Boosters

Extra Dijon for more bite • a splash more vinegar if you like it really zingy • crispy turkey bacon crumbled on top just before serving so it stays crunchy • fresh chives instead of or with the dill

🔄 Use What You’ve Got

  • No fresh dill? Dried, half the amount, or skip it — this salad doesn't live or die by dill
  • No honey? Skip it, or use a sugar substitute — a small flavor tweak, nothing to freak out about
  • No turkey bacon? Regular bacon in moderation, or skip entirely
  • Regular potatoes instead of baby gold? Works fine, cut into similar-sized chunks
