Cajun Fried Rice
What your leftover rice was always destined to become.

Second-Day Lore
Day-old rice isn't a leftover problem, it's a fried-rice opportunity — the fridge-cold grains fry up loose and crisp instead of gummy. Add the Holy Trinity and some Cajun heat, and yesterday's side dish becomes tonight's whole dinner.

✂️ Trim Trim Trim
Traditional Cajun fried rice leans on andouille or smoked sausage — swap that for diced Cajun-seasoned chicken and you save roughly 160 calories and 17g of fat per 3 oz of protein, without losing the smoky, spiced flavor the dish is built around.
Ingredients
Use-what-you’ve-got friendly.
Sorted by dish, with the spices you probably already own kept separate.
- ◆2 cups day-old cooked rice, cold, broken up
- ◆½ cup each diced onion, bell pepper, celery (the Holy Trinity)
- ◆2 cloves garlic, minced
- ◆0-cal cooking oil spray
- ◆1–2 tsp Cajun seasoning
- ◆6 oz diced Cajun-seasoned cooked chicken (leftovers work great)
- ◆1 egg
- ◆½ cup peas or corn (optional)
- ◆1–2 tbsp chicken stock or water
- ◆1 tsp Worcestershire sauce or a few dashes Creole hot sauce
- ◆1 tsp light butter, lemon or lime juice, green onion + parsley to finish
Instructions
- 1
Heat a large skillet or wok over medium-high with a spray of oil. Sauté the Holy Trinity and garlic until edges brown.
- 2
Sprinkle in Cajun seasoning, stir 30 seconds to toast.
- 3
Add cold rice in an even layer. Let it sit 1–2 min to crisp the bottom, then toss. Repeat once.
- 4
Fold in the chicken. Splash in stock to deglaze, add Worcestershire or hot sauce.
- 5
Push rice aside, scramble the egg in the empty space, then fold it through. Add peas/corn if using.
- 6
Off heat, stir in light butter and a squeeze of citrus. Finish with green onion and parsley.
🧠 Why This Works
Cold, day-old rice has less surface moisture than fresh rice, so it fries instead of steams — that's the actual secret to real fried rice texture, no special equipment required. Scrambling the egg separately before folding it in keeps it silky instead of turning to rubber.
🌶️ Flavor Boosters
Extra cayenne • a few dashes of Creole hot sauce • tomato paste for color and umami • crispy bacon bits (in moderation)
🔄 Use What You’ve Got
- —No leftover chicken? Any cooked lean protein works — shrimp is a great swap too
- —No fresh Holy Trinity? Frozen diced pepper/onion blend works fine
- —No day-old rice? Spread fresh-cooked rice on a sheet pan and chill 20 min in the freezer to mimic it
- —Want it vegetarian? Skip the chicken, double the egg
📦 Meal Prep Notes
Keeps 4 days refrigerated • Reheats best in a hot skillet, not the microwave, to keep some crisp back • Freezes okay, texture softens slightly
