BBQ Chicken Crunchwrap Bake
Crunchy, saucy, cheesy — a party tray you can actually track.

Game-Day Lore
Layers of crispy tortilla, shredded BBQ chicken, beans, corn, and melty cheese, baked until the edges crackle and drizzled with a cool ranch. It eats like a loaded nacho tray and portions like a meal-prep container. (Converted from an external meal-prep card — brand names stripped, numbers re-run leaner.)

✂️ Trim Trim Trim
The calories in a crunchwrap bake are the cheese and the sauces. Here the cheese is fat-free Mexican shred, the BBQ is no-sugar-added, and the "ranch" is nonfat Greek yogurt + ranch seasoning instead of bottled. A single high-protein, low-carb tortilla gives the crunch without a stack of them, and a spray of oil replaces the pour.
Ingredients
Use-what-you’ve-got friendly.
Sorted by dish, with the spices you probably already own kept separate.
- ◆5 oz / 140 g cooked chicken breast, shredded
- ◆1 high-protein, low-carb tortilla, cut into small squares
- ◆⅓ cup black beans, rinsed
- ◆⅓ cup corn (frozen or canned)
- ◆¼ cup red onion, diced
- ◆¼ cup fat-free Mexican cheese, shredded
- ◆3 tbsp no-sugar-added BBQ sauce
- ◆2 tbsp nonfat Greek yogurt + 1 tbsp light ranch seasoning
- ◆0-cal olive oil spray • salt & pepper • fresh cilantro (optional)
Instructions
- 1
Heat oven to 375°F (190°C).
- 2
Combine shredded chicken, BBQ sauce, black beans, corn, red onion, and 2 tbsp of the cheese. Mix well.
- 3
Mix the nonfat Greek yogurt with ranch seasoning until smooth. Set aside.
- 4
Lightly spray an oven-safe dish. Layer half the tortilla squares, then half the chicken mixture, a little cheese; repeat, and top with the rest of the cheese.
- 5
Cover with foil, bake 15 min. Uncover and bake 10–12 min more, until the cheese melts and the edges crisp.
- 6
Drizzle with the ranch and finish with cilantro. Serve hot.
🧠 Why This Works
A crunchwrap's appeal is texture and sauce, not fat. Baking crisps the tortilla with a spray instead of a fry, fat-free cheese still melts and pulls, and a no-sugar BBQ plus a Greek-yogurt ranch land the sweet-and-cool one-two without the sugar and oil the bottled versions lean on. The chicken keeps it firmly in high-protein territory.
🌶️ Flavor Boosters
Pickled jalapeño • a shake of hot sauce in the ranch • smoked paprika • extra cilantro • diced green onion
🔄 Use What You’ve Got
- —Rotisserie or leftover chicken works great here
- —No fat-free Mexican shred? Any reduced-fat shred, a touch more fat
- —Low-carb tortilla → any tortilla, or baked corn tortilla for crunch
- —No-sugar BBQ → regular BBQ, macros climb a little
📦 Meal Prep Notes
Bakes and portions into 3–4 day containers • Keep the ranch separate and drizzle at serving so it stays fresh • Reheats crispiest in an oven or air fryer
