Two moves. The cream sauce becomes nonfat milk + blended low-fat cottage cheese with a little real parmesan for depth β cottage cheese blends thicker than yogurt and brings more protein for the same calories, and the penne becomes Carbe Diem β dropping the pasta from ~200 cal / 40g net carb per serving to ~110 cal / 16g net carb. Sauce
- βΒΌ cup nonfat milk β’ ΒΌ cup nonfat or low-fat cottage cheese, blended smooth (see step 4) β’ ΒΌ cup low-sodium chicken broth

Cook the Carbe Diem pasta to package directions. Drain and set aside.

Season chicken strips with the Cajun blend. Cook in a sprayed skillet over medium-high 6β8 min until golden and cooked through. Remove.

In the same skillet, sautΓ© peppers and red onion 4β5 min until softened.

Blend the cottage cheese with the nonfat milk until completely smooth first β this is not optional; unblended cottage cheese stays grainy and will not turn into a cream sauce. Reduce heat to low, cook garlic 30 sec, then add the blended mixture, broth, parmesan, and Cajun seasoning. Whisk until smooth and creamy β don't boil.

Add pasta and chicken, toss to coat, simmer 2β3 min to thicken. Finish with parsley.
