- ◆1½ tsp Cajun seasoning • 1 tsp smoked paprika
- ◆½ tsp garlic powder • ½ tsp onion powder • ¼ tsp cayenne (optional)

Instructions

Mix Cajun seasoning, smoked paprika, garlic powder, onion powder, and cayenne in a small bowl.

Pat the salmon completely dry — moisture is the enemy of a good crust.

Press the spice mix firmly onto the flesh side of each fillet — press, don't just sprinkle.

Heat a cast iron or nonstick skillet over medium-high until very hot, about 2 full minutes.

Add oil. When it shimmers, lay the salmon flesh-side down.

Cook undisturbed 3–4 min until a dark blackened crust forms. Do not move it.

Flip to the skin side, cook another 3–4 min to 145°F (63°C).

Optional: add butter in the last 30 seconds, tilt the pan, and baste.

Squeeze lemon over the top, rest 1 minute, serve.

A dry fillet plus a truly hot pan lets the spices and the fish's surface proteins caramelize in seconds — that's the "blackened" crust, and it can only happen if steam isn't in the way. Leaving the fish undisturbed lets that crust set instead of tearing, and the quick sear keeps the inside silky.
