Every meatloaf has a secret, and it's usually 80/20 beef and a sleeve of crackers. Ours keeps the moisture and ditches the grease: 93% lean beef, a half box of stuffing mix doing the binder's job, and a little can of mushrooms diced in to hold water so it never dries out. Slice it, blanket it in brown gravy, park it over rice with a scoop of green beans. Meal-prep four containers and you've got the week's most comforting lunch.

The fat's already gone before you season: 93% lean beef instead of 80/20 (that alone is ~19g less fat per 6 oz), diced canned mushrooms hold the moisture that fat usually would, egg substitute binds instead of whole eggs, and the stuffing mix is the only binder β no oil, no butter, nothing fried.

The Loaf
- β1Β½ lb / 680 g 93% lean ground beef
- βΒ½ box Stove Top stuffing mix (~85 g dry) β the binder; no separate breadcrumbs needed
- β1 small can mushrooms (4 oz / 113 g), drained + diced β moisture insurance
- βΒ½ medium onion (60 g), diced
- β2 tbsp / 30 ml Worcestershire sauce
- βΒ½ cup / 120 g egg substitute (or 2 egg whites)
- βΒ½ tsp garlic powder β’ Β½ tsp paprika β’ salt + pepper
Optional Glaze
- β2 tbsp reduced-sugar ketchup β’ 1 tsp Worcestershire β’ Β½ tsp mustard

Instructions

Heat oven to 375Β°F / 190Β°C. Line a sheet pan or loaf pan.

Mix beef, stuffing mix, mushrooms, onion, egg substitute, Worcestershire, and seasonings until just combined β don't overwork it.

Shape into a tight loaf. Brush with glaze if using.

Bake 45β55 min, until the center hits 165Β°F.

Rest 10 min before slicing (this is where the juices settle back in).

Make the envelope gravy per packet. Plate meatloaf over 3 oz rice, blanket with gravy, green beans on the side.

Diced canned mushrooms are ~90% water β they steam inside the loaf and keep lean beef from going dry, no extra fat required. Stuffing mix is already seasoned, so it binds and flavors in one move. Egg substitute holds it together for zero added fat.
