Yield: ~7.3 oz / 206 g (8 bars)

Default Portion: 1 bar (~0.9 oz)

✂️ Trim Trim Trim

Nothing to trim here — oat flour and protein powder are already lean by nature. PB2 over real peanut butter is the one lever that matters if you want to keep these bars small and mighty.

Ingredients

Use-what-you’ve-got friendly.

Sorted by dish, with the spices you probably already own kept separate.

  • 1 cup oat flour (or blend rolled oats into flour)
  • 1 scoop vanilla protein powder
  • ¼ cup PB2 powdered peanut butter
  • Sugar-free maple syrup or monk fruit syrup, enough to bind (start with 2 tbsp)
  • 2 tbsp mini chocolate chips
  • Splash of milk, as needed

Instructions

  1. 1

Mix oat flour, protein powder, and PB2 in a bowl.

  2. 2

Stir in syrup and a splash of milk until it forms a thick, moldable dough.

  3. 3

    Fold in chocolate chips.

  4. 4

Press into a lined small dish or roll into 8 bars.

  5. 5

Chill at least 1 hour before slicing/serving.

🧠 Why This Works

Oat flour and protein powder together create the same crumbly-but-holds-together texture real cookie dough has, without needing butter or raw egg to bind it. Chilling firms everything up so the bars hold their shape at room temperature for a few hours.

🌶️ Flavor Boosters

Pinch of cinnamon • extra vanilla extract • a drizzle of melted sugar-free chocolate on top

🔄 Use What You’ve Got

  • No oat flour? Blend any rolled oats in a blender or food processor until fine
  • No PB2? Real peanut butter works, adds real fat — start with less, it's more potent
  • No mini chocolate chips? Chop a regular bar roughly

📦 Meal Prep Notes
