🧠 Why This Works

Glaze alone is basically balsamic syrup — sweet and viscous. Oil loosens it, and a sharper acid (not more balsamic) is what actually cuts the sweetness so it tastes like a vinaigrette instead of dessert sauce on your tomatoes.
